Chestnut, Mushroom and Cranberry Loaf

I made this loaf with the free chestnuts lying in the road. I used half chestnuts and half walnuts but you could use any combination you prefer. It tasted yummy and didn't last long. It would make a perfect vegetarian main course for Christmas.

Chestnut Loaf

Ingredients Method
1 large leek, finely sliced
1 large onion, chopped
2 cloves garlic, crushed
2 tbsp olive oil
200g mushrooms
200g chestnuts, roughly chopped
50g fresh cranberries or 50g dried soaked in hot water then drained
3 tbsp chopped parsley
1 large egg, beaten
Salt and pepper
Line a 1lb loaf tin with baking parchment

Pre-heat oven to 200c/400f/Gas 6

Fry the leek, onion and garlic in the oil until soft. Add the mushrooms and cook for 5 minutes.
Mix all the dry ingredients in a bowl and add the cooked mixture. Add the egg, salt and pepper and mix well.
Place mixture in the tin and pack down, cover with foil and bake for 1 hour. Remove the foil for the last 5 minutes.
Allow to rest for 20 minutes before taking out of the tin. Enjoy.

  2. Another for the recipe book. Would be lovely cold with a crispy salad, eaten outdoors in lovely sun, not pouring rain as we have here. xx
